Ingredients

  • 1.5 cups Almond flour
  • 2 oz Cream cheese
  • 1.5 cups Mozzarella cheese, shredded
  • 1 large Egg
  • 1 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Olive oil
  • 14 oz Canned tomatoes, crushed
  • 0.25 cup Fresh basil, chopped
  • 0.5 medium Onion, finely chopped
  • 2 Garlic cloves, minced
  • 0.25 cup Parmesan cheese, grated

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a microwave-safe bowl, combine cream cheese and shredded mozzarella. Microwave on high for about 1 minute or until fully melted, stirring occasionally.

Step 3

Add almond flour, egg, garlic powder, salt, and black pepper to the melted cheese. Mix until a uniform dough forms.

Step 4

Divide the dough into 4 equal sections and roll each section into a long rope about 1/2-inch thick on a lightly floured surface. Cut each rope into 1-inch pieces to form gnocchi.

Step 5

Place gnocchi pieces onto a parchment-lined baking sheet and bake in the preheated oven for 10-12 minutes or until slightly golden.
