Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, cold and cubed
  • 2 cups Mozzarella cheese, shredded
  • 2 tablespoons Cream cheese
  • 1 large Egg, beaten
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Erythritol sweetener
  • 2 tablespoons Heavy cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, mix together almond flour, coconut flour, baking powder, and salt.

Place the mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave on high in 30-second intervals, stirring between each, until the cheeses are melted and combined.

Fold the melted cheese into the flour mixture, and then add the beaten egg and vanilla extract. Mix until a dough forms.

Knead the dough lightly on a surface dusted with almond flour until it's smooth.
