Ingredients

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 0.75 cup erythritol
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 teaspoons hazelnut extract
  • 0.5 teaspoon xanthan gum
  • 0.5 cup roasted hazelnuts
  • 0.25 cup sugar-free chocolate chips

Directions

Step 1

In a medium saucepan, combine the heavy cream, unsweetened almond milk, and erythritol. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally to dissolve the erythritol.

Step 2

In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Gradually pour about half a cup of the warm cream mixture into the egg yolks, whisking constantly to temper the eggs.

Slowly pour the tempered egg mixture back into the saucepan with the remaining cream and milk, stirring constantly.
