Ingredients

  • 2 cups almond flour
  • 0.75 cup erythritol
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together almond flour, erythritol, ground ginger, ground cinnamon, ground cloves, baking soda, and salt until well combined.

Step 3

In a separate large bowl, beat the unsalted butter until creamy using an electric mixer.

Step 4

Add the egg and vanilla extract to the butter, and beat again until well combined and creamy.

Step 5

Gradually add the dry ingredient mixture to the wet ingredients, mixing until a dough forms.

Step 6

Scoop out tablespoon-sized portions of the dough and roll each into a ball. Place the dough balls onto the prepared baking sheet, leaving about 2 inches of space between them.

Step 7

Flatten each ball slightly with the palm of your hand or the bottom of a glass to form a disc shape.

Step 8

Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden brown.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 10

Store cookies in an airtight container at room temperature for up to a week.
