Ingredients

  • 5 pounds leg of lamb
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 8 whole garlic cloves
  • 0.25 cups olive oil
  • 1 whole lemon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons unsalted butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Take the leg of lamb out of the refrigerator and allow it to sit at room temperature for about 20 minutes.

Step 3

In a small bowl, combine the olive oil, salt, pepper, and juice of the lemon.

Step 4

Peel and halve the garlic cloves.

Step 5

Carefully make small incisions all over the lamb with a sharp knife and insert the halved garlic cloves into the slits.

Rub the olive oil mixture all over the lamb to coat it evenly.

Tuck the rosemary and thyme sprigs under the lamb, distributing them evenly.
