Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 cup Erythritol sweetener
  • 0.5 teaspoon Xanthan gum
  • 0.25 teaspoon Salt
  • 2 cups Mozzarella cheese, shredded
  • 2 ounces Cream cheese
  • 1 large Egg
  • 0.25 cup Butter
  • 1 tablespoon Cinnamon
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Heavy cream

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking pan with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, baking powder, erythritol sweetener, xanthan gum, and salt. Set aside.

Step 3

In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Heat in the microwave for about 1-2 minutes, or until melted, stirring occasionally.

Step 4

Add the melted cheese mixture to the dry ingredients, followed by the egg and vanilla extract. Knead the mixture until it forms a smooth dough.

Place the dough between two sheets of parchment paper and roll out into a rectangle, approximately 10x8 inches.
