Ingredients

  • 1 cup Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1.25 cups Boiling water
  • 2 tablespoons Ghee
  • 2 tablespoons Ghee (for cooking)

Directions

Step 1

In a large mixing bowl, combine coconut flour, psyllium husk powder, baking powder, and salt.

Step 2

Gradually pour boiling water into the dry ingredients, stirring continuously until a dough forms. The dough should be firm and pliable but not sticky.

Step 3

Add 2 tablespoons of ghee to the dough and knead it until the ghee is fully incorporated and the dough is smooth.

Step 4

Divide the dough into 8 equal portions and roll each portion into a ball.

Step 5

Prepare a clean surface or use a silicone baking mat. Place a ball of dough on it and flatten it with your hands. Use a rolling pin to roll it out into a thin circle, about 6 inches in diameter.

Step 6

Heat a non-stick skillet or a flat tawa over medium heat. Add a small amount of ghee (about 0.5 teaspoon) to the skillet.

Step 7

Place the rolled out roti on the skillet. Cook on one side until bubbles start to form and small golden spots appear, approximately 2-3 minutes.

Step 8

Flip the roti and cook the other side, pressing gently with a spatula to ensure even cooking, for another 2-3 minutes.

Step 9

Repeat the rolling and cooking process with the remaining dough balls, adding more ghee to the skillet as needed.

Step 10
