Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons erythritol
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 4 tablespoons unsalted butter
  • 4 large eggs
  • 0.5 cup heavy cream
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat the oven to 425°F (220°C). Place a 10-inch oven-safe skillet in the oven to heat while you prepare the batter.

Step 2

In a medium bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.

In a large bowl, melt 2 tablespoons of butter in the microwave or on the stove.

Add the eggs, heavy cream, and vanilla extract to the melted butter, and whisk until well combined.
