Ingredients

  • 15 pieces fresh garlic cloves
  • 1 teaspoon salt
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons cold water
  • 1 cup avocado oil
  • 1 cup olive oil

Directions

Step 1

Peel the garlic cloves and place them in a food processor with the salt. Pulse until the garlic is finely minced, scraping down the sides as needed.

Step 2

Add half of the lemon juice and half of the cold water to the garlic mixture. Process again until the mixture is smooth.

Step 3

Mix the avocado oil and olive oil in a pourable container. With the processor running, very slowly drizzle in the mixed oils in a thin, steady stream. This should take about 8-10 minutes.

Step 4

Once all the oil has been incorporated, stop the processor and add the remaining lemon juice and water. Process again for about 1-2 minutes until the toum is fluffy and has an airy texture.

Step 5

Taste and adjust the salt or lemon juice if needed. The toum should be thick, white, and creamy.

Step 6

Transfer the toum to a clean jar or container and store it in the refrigerator. It can be kept for up to 1 month and will thicken slightly when chilled.
