Ingredients

  • 1 large egg yolk
  • 2 cloves garlic
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup olive oil
  • 0.5 cup avocado oil

Directions

Step 1

Peel and finely mince the garlic cloves. To achieve a smooth texture, you can also use a garlic press.

Step 2

In a medium bowl, whisk together the egg yolk, minced garlic, Dijon mustard, lemon juice, salt, and black pepper until well combined.

Step 3

Slowly drizzle in the olive oil while continuously whisking the mixture. Once you've incorporated half of the olive oil, drizzle in the avocado oil in the same slow manner, continuing to whisk.

Step 4

Continue whisking the mixture until all the oils are fully emulsified, and the mayonnaise is thick and creamy.

Step 5

Taste the mayonnaise and adjust the seasoning with additional salt and lemon juice if necessary.

Step 6

Transfer the mayonnaise to a clean jar or airtight container and store it in the refrigerator for up to a week.
