Ingredients

  • 400 g Radishes
  • 60 g Almond flour
  • 50 g Grated Parmesan cheese
  • 1 large Egg
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Fresh parsley, chopped
  • 100 ml Olive oil
  • 30 g Coconut flour

Directions

Step 1

Wash and trim the radishes, then grate them using a box grater or food processor. Place the grated radishes in a clean kitchen towel and squeeze out as much liquid as possible.

Step 2

In a large mixing bowl, combine the grated radishes, almond flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Step 3

Shape the mixture into small balls or patties, about the size of a golf ball. If the mixture is too sticky, wet your hands slightly to help with shaping.

Step 4

Place the coconut flour in a shallow dish. Roll each croquette in the coconut flour to lightly coat each one.

Step 5

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the croquettes to the skillet, leaving enough space between them to easily turn.

Step 6

Fry the croquettes for about 3-4 minutes on each side, or until they are golden brown and crispy. Do this in batches if necessary to avoid overcrowding the pan.

Step 7

Once cooked, remove the croquettes from the skillet and drain on a paper towel-lined plate.

Step 8

Garnish with chopped parsley before serving. Serve the keto radish croquettes warm as a snack or a side dish.
