Ingredients

  • 2 large chicken breasts
  • 1 cup almond flour
  • 0.5 cup grated Parmesan cheese
  • 2 large eggs
  • 2 tablespoons heavy cream

  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup coconut oil
  • 1 for serving lemon wedges

Directions

Step 1

Place the chicken breasts on a cutting board. Cut each breast in half horizontally to make four thin fillets.

Step 2

Place the chicken fillets between two sheets of plastic wrap and pound them with a meat mallet or rolling pin until they are about 1/4 inch thick.

In one shallow bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
