Ingredients

  • 1 whole Cucumber
  • 1.5 cups Cherry tomatoes
  • 1 whole Red bell pepper
  • 0.5 whole Red onion
  • 0.5 cup Kalamata olives
  • 0.75 cup Feta cheese
  • 0.5 cup Fresh parsley
  • 0.25 cup Fresh mint leaves
  • 0.25 cup Extra virgin olive oil
  • 3 tablespoons Lemon juice
  • 2 cloves Fresh garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash all the vegetables thoroughly under running water and pat them dry with a clean kitchen towel.

Step 2

Cut the cucumber lengthwise into quarters, then slice into small, bite-sized pieces.

Halve the cherry tomatoes, then set aside in a large mixing bowl.
