Ingredients

  • 0.5 cup Extra virgin olive oil
  • 0.5 cup Fresh parsley, chopped
  • 0.25 cup Fresh cilantro, chopped
  • 2 tablespoons Fresh dill, chopped
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 0.5 medium Avocado, pitted and peeled
  • 0.25 cup Water

Directions

Step 1

Combine the chopped fresh parsley, cilantro, and dill in a food processor.

Step 2

Add the minced garlic, Dijon mustard, fresh lemon juice, and red wine vinegar into the food processor.

Step 3

Halve the avocado, remove the pit and peel. Add half of the avocado to the food processor.

Step 4

Pour in the extra virgin olive oil and water.

Step 5

Season the mixture with salt and freshly ground black pepper.

Step 6

Pulse the ingredients in the food processor until they start to combine.

Step 7

Blend the mixture on high speed until smooth and creamy. If the dressing is too thick, adjust by adding more water, one tablespoon at a time, to reach the desired consistency.
