Ingredients

  • 1 medium head Cauliflower
  • 3 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 medium Bell pepper
  • 1 medium Zucchini
  • 1 small Carrot
  • 2 stalks Green onions
  • 2 tablespoons Soy sauce
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cilantro

Directions

Step 1

Break the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Mince the garlic cloves and add them to the skillet, sautéing for 1 minute until fragrant.

Step 4

Dice the bell pepper, zucchini, and carrot into small, even pieces. Chop the green onions.

Step 5

Add the diced vegetables to the skillet and sauté for about 5 minutes or until they begin to soften.

Step 6

Push the vegetables to one side of the skillet and add the remaining tablespoon of olive oil in the cleared side. Add the cauliflower rice and sauté for 5-7 minutes until tender.

Mix the vegetables and cauliflower rice together, then add soy sauce, lemon juice, salt, and black pepper. Stir well to combine.
