Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil

  • 1.5 cups heavy cream
  • 4 tablespoons unsalted butter
  • 1 cup Parmesan cheese, grated

  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 medium zucchini, spiralized into noodles
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the shrimp and cook for about 2-3 minutes on each side or until they are pink and opaque. Remove the shrimp from the skillet and set aside.
