Ingredients

  • 1 cup Dried green lentils
  • 1 cup Almond flour
  • 1 large Egg
  • 1 cup Fresh parsley leaves
  • 0.5 cup Fresh cilantro leaves
  • 2 Garlic cloves
  • 0.5 medium Onion
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Baking powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Olive oil

Directions

Step 1

Rinse and cook the lentils according to package instructions or until they are tender. Drain and let them cool completely.

Step 2

In a food processor, combine almond flour, cooked lentils, egg, parsley, cilantro, garlic, half an onion, cumin, coriander, baking powder, salt, and black pepper.

Pulse until the mixture has a coarse paste consistency, scraping down the sides of the bowl as needed. Do not over-process; the mixture should still have some texture.

Divide the mixture into about 12 equal portions and shape them into small patties or balls.
