Ingredients

  • 1 medium head Raw cauliflower
  • 0.5 cup Almond flour
  • 2 large Eggs
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh cilantro
  • 3 large Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Olive oil
  • 4 Lettuce leaves
  • 1 medium Sliced tomatoes
  • 4 rings Red onion slices
  • 0.5 cup Tahini sauce

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and pulse them in a food processor until it resembles rice.

Step 3

In a large mixing bowl, combine the cauliflower rice, almond flour, eggs, parsley, cilantro, minced garlic, cumin, coriander, salt, and black pepper. Mix until well combined.
