Ingredients

  • 1 pound extra lean ground veal
  • 0.5 cup almond flour
  • 0.25 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the extra lean ground veal, almond flour, Parmesan cheese, egg, parsley, garlic powder, onion powder, salt, and black pepper.

Step 3

Mix the ingredients gently with your hands until just combined. Be careful not to overmix, as this can make the meatballs tough.

Step 4

Form the mixture into 16 evenly-sized meatballs and place them on the prepared baking sheet.

Step 5

In a large skillet over medium heat, add the olive oil and heat until shimmering.

Step 6

Working in batches if necessary, brown the meatballs on all sides for about 2-3 minutes per side, then return them to the baking sheet.

Step 7

Once all the meatballs are browned, bake them in the preheated oven for 15 minutes, or until they reach an internal temperature of 160°F (71°C).

Step 8

Remove the meatballs from the oven and let them rest for 5 minutes before serving.

Step 9

Serve the meatballs hot, garnished with additional chopped parsley if desired.
