  • 2 large Egg whites
  • 100 grams Erythritol
  • 1 teaspoon Vanilla extract
  • 240 milliliters Heavy cream
  • 150 grams Strawberries
  • 100 grams Raspberries
  • 100 grams Blackberries

Directions

Step 1

Preheat your oven to 100°C (212°F) and line a baking sheet with parchment paper.

Step 2

In a clean, dry bowl, whisk the egg whites with an electric mixer until soft peaks form.

Step 3

Gradually add the erythritol, 1 tablespoon at a time, while continuing to whisk. Keep whisking until the mixture forms stiff peaks and is glossy.

Gently fold in the vanilla extract into the meringue mixture.
