  • 1 medium red bell pepper
  • 250 ml dry red wine
  • 500 ml beef stock
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon xanthan gum
  • 2 tablespoons chopped parsley

Directions

Step 1

Pat the beef cheeks dry with paper towels and season with salt and black pepper.

Step 2

In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.

Step 3

Add the seasoned beef cheeks and brown on all sides, about 10 minutes. Remove from the pot and set aside.

Step 4

Lower the heat to medium and add the chopped onion, garlic, celery, carrot, and red bell pepper to the pot.

Sauté the vegetables until they are soft, about 8-10 minutes.

Stir in the tomato paste and cook for an additional 2 minutes.
