  • 0.33 cup erythritol sweetener
  • 0.5 cup unsalted butter
  • 3 ounces cream cheese
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup heavy cream
  • 0.5 cup cheddar cheese, grated (for topping)
  • 0.25 cup butter (for topping)
  • 2 tablespoons sugar-free powdered sweetener (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners and set aside.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, baking powder, xanthan gum, and erythritol sweetener. Whisk until well combined.

In a microwave-safe bowl, melt 1/2 cup unsalted butter and cream cheese together until both are softened. Stir to combine and set aside to cool slightly.
