Ingredients

  • 300 grams Cauliflower florets
  • 1 small Carrots
  • 3 large Boiled eggs
  • 150 grams Cooked chicken breast
  • 3 small Pickled cucumbers
  • 50 grams Green olives
  • 150 grams Mayonnaise
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Bring a large pot of water to a boil. Add the cauliflower florets and cook for about 8-10 minutes, until tender but not mushy. Drain and let cool.

Step 2

Dice the small carrot into tiny cubes. In another pot, boil the carrot cubes for 4-5 minutes until just tender. Drain and let cool.

Step 3

Peel and dice the boiled eggs. Set aside.

Step 4

Chop the cooked chicken breast into small pieces.

Step 5

Finely dice the pickled cucumbers and slice the green olives into small rounds.
