Ingredients

  • 150 grams Almond flour
  • 30 grams Coconut flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 200 grams Mozzarella cheese, shredded
  • 50 grams Cream cheese
  • 1 large Egg
  • 30 grams Butter, unsalted
  • 100 grams Gouda cheese, sliced
  • 1 Egg yolk
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.

Step 2

In a large microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for about 1 minute, stirring halfway through, until the cheeses are melted and well combined.

Step 3

Add the almond flour, coconut flour, baking powder, and salt to the cheese mixture. Stir until a dough begins to form.

Step 4

Add the egg and unsalted butter to the dough. Mix thoroughly until everything is well combined. The dough should be slightly sticky but manageable.

Divide the dough into 4 equal parts. On a lightly floured surface (using either almond or coconut flour), roll each piece into a rectangle about 5x3 inches.
