  • 15 grams Coriander seeds
  • 10 grams Black pepper
  • 5 grams Nutmeg
  • 2 grams Clove powder
  • 20 grams Salt
  • 30 milliliters Cider vinegar
  • 200 grams Natural sheep casings

Directions

Step 1

Begin by toasting the coriander seeds in a dry pan over medium heat until they start to pop and become aromatic. Transfer them to a spice grinder or a mortar and pestle and grind them coarsely.

In a large mixing bowl, combine the ground beef and ground pork together.

Add the ground coriander, black pepper, nutmeg, clove powder, and salt to the meat mixture. Mix thoroughly to ensure the spices are evenly distributed throughout.

Add the cider vinegar and continue to mix the meat until it's well incorporated and the mixture becomes slightly sticky.
