Ingredients

  • 200 g Cauliflower rice
  • 1 tbsp Rice vinegar
  • 1 whole Avocado
  • 1 small Cucumber
  • 100 g Cooked shrimp
  • 2 Nori sheets
  • 50 g Cream cheese
  • 1 tbsp Soy sauce (or tamari for gluten-free)
  • 1 tbsp Toasted sesame seeds
  • 1 tsp Wasabi (optional)

Directions

Step 1

Begin by prepping the cauliflower rice. In a medium-sized pan over medium heat, add the cauliflower rice and stir-fry for 5-7 minutes until tender. Remove from heat and stir in the rice vinegar. Let it cool to room temperature.

Step 2

Peel and pit the avocado, then slice it into thin strips. Also, peel the cucumber, remove the seeds, and slice it into thin strips.

Step 3

Take a nori sheet and place it shiny side down on a bamboo sushi mat. Spread half of the cauliflower rice mixture evenly over the nori, leaving about an inch of space on the top edge.

Step 4

Layer half of the cream cheese, cucumber strips, and cooked shrimp along the bottom edge of the nori sheet.

Step 5

Use the bamboo mat to carefully roll the nori sheet over the filling, pressing gently to ensure a tight roll. Brush a little water on the top edge of the nori to seal it.

With a sharp knife, slice the roll into 8 equal pieces.

Repeat steps 3-6 with the second nori sheet and the remaining ingredients.

To assemble the Dragon Roll, lay the avocado slices over the top of each sushi roll piece in a fan-like manner. Press gently to adhere.
