Ingredients

  • 1 lb chicken breast
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp coconut oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp sugar-free sriracha sauce
  • 0.5 cup chicken broth
  • 2 stalks green onions, sliced
  • 1 medium red bell pepper, sliced
  • 0.25 cup peanuts, crushed
  • 1 tbsp sesame seeds

Directions

Step 1

Slice the chicken breast into thin strips. Season with salt and black pepper.

Step 2

Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

Step 3

Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of coconut oil, followed by the minced garlic and ginger. Saute for 1 minute or until fragrant.

Stir in the soy sauce, sugar-free sriracha sauce, and chicken broth. Let the mixture simmer for 2 minutes to reduce slightly.
