Ingredients

  • 1 lb Pork shoulder
  • 0.5 lb Pork liver
  • 2 cups Fresh pig's blood
  • 2 tbsp Coconut oil
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 0.5 cup Vinegar
  • 1 cup Water
  • 2 tbsp Fish sauce
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 2 pieces Bay leaves
  • 2 pieces Chili peppers, sliced
  • 4 cups Cauliflower rice (for serving)

Directions

Step 1

Cut the pork shoulder and liver into bite-sized pieces.

Step 2

Heat coconut oil in a large pot over medium heat.

Step 3

Saute chopped onion and garlic in the pot until soft and fragrant.

Step 4

Add pork shoulder pieces and cook until browned on all sides.

Step 5

Stir in the sliced pork liver and continue cooking for about 5 minutes.

Step 6

Pour in the vinegar and let it simmer for 2 minutes without stirring to avoid the sour taste from overpowering via steam evaporation.

Step 7

Add water, fish sauce, salt, pepper, and bay leaves. Stir to combine.

Step 8

Simmer uncovered on low heat for about 30 minutes or until the pork is tender.

Step 9

Slowly pour in the pig’s blood while continuously stirring to prevent it from coagulating.

Step 10

Cook for an additional 15 minutes, continually stirring until the blood thickens and integrates fully with the stew.

Step 11

Add the chili peppers and adjust seasoning if necessary.

Step 12

Serve hot with cauliflower rice to keep it keto-friendly.
