  • 400 grams Extra-firm tofu
  • 2 tablespoons Coconut oil
  • 2 tablespoons Tamari sauce (gluten-free soy sauce)
  • 1 teaspoon Sesame oil
  • 2 cloves Fresh garlic
  • 1 teaspoon Fresh ginger
  • 1 medium Red bell pepper
  • 1 medium Zucchini
  • 2 stalks Green onions
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Sesame seeds

Directions

Step 1

Press the tofu: Place the tofu block between layers of paper towels and press gently to remove excess moisture. Let it sit for at least 10 minutes while you prepare the other ingredients.

Step 2

Slice the pressed tofu into bite-sized cubes.

Step 3

Chop the garlic finely and grate the ginger. Slice the red bell pepper and zucchini into thin strips. Chop the green onions into 1-inch pieces.

Heat 1 tablespoon of coconut oil in a large non-stick skillet or wok over medium-high heat.

Add the tofu cubes to the skillet in a single layer. Cook for about 2-3 minutes on each side until golden brown. Remove the tofu from the pan and set aside.

In the same skillet, add the remaining 1 tablespoon of coconut oil. Add the chopped garlic and grated ginger, sautéing until fragrant, about 30 seconds.

Return the cooked tofu to the skillet. Pour the tamari and sesame oil over the tofu and vegetables. Toss everything together to coat well.

Season the tofu and vegetables with salt and black pepper to taste. Cook for an additional 2 minutes to allow the flavors to meld.

Add the chopped green onions and sesame seeds, tossing them briefly with the mixture. Cook for another 1 minute.
