Ingredients

  • 200 grams Almond flour
  • 150 grams Erythritol sweetener
  • 150 grams Unsalted butter
  • 3 large Eggs
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 200 ml Heavy cream
  • 100 grams Sugar-free milk chocolate
  • 50 grams Salted almonds
  • 1 tablespoon Unsweetened cocoa powder

Directions

Step 1

Preheat your oven to 160°C (320°F) and line a 20 cm (8-inch) round cake pan with parchment paper.

Step 2

In a bowl, combine almond flour and baking powder. Set aside.

Step 3

In a separate large bowl, melt the unsalted butter in the microwave or over a double boiler. Once melted, add erythritol sweetener and mix well until smooth.

Add eggs one at a time to the butter mixture, whisking well after each addition. Mix in the vanilla extract.

Step 5

Gradually fold the almond flour mixture into the wet ingredients until you have a smooth batter.

Pour the batter into the prepared cake pan, smoothing the surface with a spatula.

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
