Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Chia seeds
  • 1 cup Boiling water
  • 1 medium Yellow onion, finely chopped
  • 1 large Green chili, finely chopped
  • 1 tablespoon Ginger-garlic paste
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, ground
  • 2 tablespoons Fresh coriander leaves, chopped
  • 0.5 cup Coconut oil (for frying)

Directions

Step 1

Start by preparing a chia seed gel: In a small bowl, combine the chia seeds with one cup of boiling water. Stir well and let it sit for 10 minutes until it forms a gel-like consistency.

Step 2

In a large mixing bowl, add the almond flour, finely chopped onion, green chili, ginger-garlic paste, cumin seeds, coriander powder, turmeric powder, salt, and black pepper.

Add the prepared chia seed gel to the almond flour mixture. Mix well to form a thick batter.

Gently fold in the chopped fresh coriander leaves into the batter.

Heat the coconut oil in a deep frying pan over medium heat until it reaches around 350°F (175°C).

Using a spoon or your hands, form small balls or dollops of the batter and carefully drop them into the hot oil.

Fry the bhajias in batches to avoid overcrowding the pan. Cook them for about 3-4 minutes on each side or until they are golden brown and crispy.
