Ingredients

  • 200 g Almond flour
  • 80 g Erythritol
  • 100 g Unsalted butter
  • 1 tsp Vanilla extract
  • 4 large Eggs
  • 250 ml Heavy cream
  • 30 g Coconut flour
  • 200 ml Unsweetened almond milk
  • 1 tbsp Gelatin powder

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a 20cm (8-inch) square baking dish with parchment paper.

Step 2

In a bowl, combine the almond flour, 40g erythritol, and melted butter. Mix until dough-like consistency forms.

Step 3

Press half the dough evenly into the prepared baking dish to form a crust. Bake for 10-12 minutes until lightly golden.

Step 4

In a saucepan, heat the heavy cream and almond milk until just beginning to simmer. Remove from heat.

Step 5

In a mixing bowl, whisk together the eggs, coconut flour, and remaining 40g of erythritol until well combined.

Slowly whisk the warm cream mixture into the egg mixture, ensuring to temper the eggs gradually to avoid scrambling.

Add the gelatin powder and vanilla extract, continuing to whisk until completely dissolved and smooth.

Pour the custard mixture over the baked crust in the baking dish.
