Ingredients

  • 2 pieces Chicken breast, boneless and skinless
  • 2 tablespoons Olive oil
  • 1 tablespoon Curry powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Coconut milk
  • 6 pieces Lettuce leaves, large
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Lime juice
  • 2 tablespoons Cilantro, chopped
  • 1 piece Avocado, sliced

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Rinse and pat dry the chicken breasts.

Step 3

Rub the chicken with olive oil and season with curry powder, garlic powder, onion powder, salt, and black pepper.

Step 4

Place the chicken breasts in a baking dish and pour the coconut milk over them.

Step 5

Bake in the preheated oven for 18-20 minutes or until the chicken is cooked through and no longer pink in the center.

While the chicken is baking, prepare the wrapping ingredients. Rinse and dry the lettuce leaves.

Step 7

In a small bowl, mix the mayonnaise with lime juice and half of the chopped cilantro.
