Ingredients

  • 100 grams Sesame seeds
  • 50 grams Almonds (chopped)
  • 50 grams Sunflower seeds
  • 30 grams Coconut flakes (unsweetened)
  • 50 grams Erythritol or other keto-friendly sweetener
  • 60 ml Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Sea salt

Directions

Step 1

Preheat your oven to 160°C (320°F). Line a 9x9 inch baking pan with parchment paper, leaving a bit of overhang for easy removal.

Step 2

In a large bowl, combine the sesame seeds, chopped almonds, and sunflower seeds with the coconut flakes.

Step 3

In a small saucepan over low heat, melt the coconut oil and mix in the erythritol until fully dissolved. Stir in the vanilla extract and sea salt.

Step 4

Pour the coconut oil mixture over the dry ingredients, stirring until everything is well coated.

Step 5

Transfer the mixture into the prepared baking pan, pressing down firmly with a spatula to create an even layer.

Step 6

Bake for 20 to 25 minutes, or until the edges turn golden brown.

Step 7

Remove from the oven and allow to cool completely in the pan to let the bars set properly, about 1 hour.

Step 8

Once cooled, lift the parchment to remove the whole slab from the pan, then cut into 12 bars.

Step 9

Store the bars in an airtight container, preferably in the fridge, to keep them crispy.
