In a medium bowl, whisk together the almond flour, baking powder, one egg, and 30 grams of melted butter. Blend until a smooth batter forms.
Pour the batter into two greased ramekins or small baking dishes evenly and microwave on high for 90 seconds until set. Let them cool slightly, then slice each into two to form thin bread-like layers.
In a small saucepan over medium heat, melt 15 grams of butter, add the heavy cream and bring to a gentle simmer. Gradually add 70 grams of grated Gruyère cheese, stirring until a smooth cheese sauce forms. Season with half of the salt and pepper.
Toast the almond flour bread slices in a pan with another 15 grams of butter until golden brown.
