  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 0.5 teaspoons Xanthan gum
  • 1 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.25 cups Butter (unsalted)
  • 2 tablespoons Cream cheese
  • 2 large Eggs
  • 1.5 cups Mozzarella cheese (shredded)
  • 2 tablespoons Stevia or erythritol
  • 1 teaspoons Vanilla extract
  • 1 cups Heavy whipping cream
  • 1 cups Fresh strawberries

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for 1 minute and stir until well combined and smooth.

Step 3

In a large mixing bowl, whisk together almond flour, coconut flour, xanthan gum, baking powder, and salt.

Add the melted cheese mixture, eggs, and 1 tablespoon of stevia or erythritol to the dry ingredients. Mix well until a dough forms.
