Ingredients

  • 2 pieces Large zucchini
  • 1 piece Red bell pepper
  • 100 grams Cream cheese
  • 50 grams Fresh spinach leaves
  • 50 grams Almond flour
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper.

Step 2

Using a mandoline or very sharp knife, carefully slice the zucchinis lengthwise into thin strips, about 1/8 inch thick.

Step 3

In a bowl, mix cream cheese with garlic powder, onion powder, salt, and black pepper until well combined.

Step 4

Wash and pat dry the spinach leaves and slice the red bell pepper into thin strips.

Step 5

Lay a zucchini slice on a flat surface, spread a thin layer of the cream cheese mixture over it, and place a few spinach leaves and a slice or two of red bell pepper at one end of the zucchini.

Carefully roll the zucchini around the vegetables tightly and secure the end with a toothpick if necessary. Repeat with the remaining zucchini slices.

Step 7

In a shallow bowl, beat the egg. In another shallow dish, place the almond flour.

Dip each zucchini roll in the beaten egg, then roll it in almond flour until completely coated.

Place the zucchini rolls on the prepared baking sheet and drizzle with olive oil.
