Ingredients

  • 2 medium Zucchini
  • 1 cup Cauliflower florets
  • 1 medium Carrot
  • 2 Eggs
  • 0.5 cup Almond flour
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Green onion, chopped
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 tablespoons Olive oil

Directions

Step 1

Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel, wrap it up, and squeeze out as much moisture as possible. Set aside.

Step 2

Finely chop the cauliflower florets until they resemble rice grains.

Step 3

Peel and grate the carrot using a box grater.

Step 4

In a large mixing bowl, whisk the eggs, then add almond flour and grated Parmesan. Stir until well combined.

Add the squeezed zucchini, chopped cauliflower, grated carrot, and chopped green onion to the egg-flour mixture.
