Ingredients

  • 1 small head Cauliflower
  • 1 medium Zucchini
  • 50 grams Spinach
  • 1 cup Almond flour
  • 0.5 cup Parmesan cheese
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 3 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and rice them using a food processor until it resembles grain. You should have about 2 cups of cauliflower rice.

Step 3

Grate the zucchini and use a clean kitchen towel to squeeze out excess moisture.

Finely chop the spinach leaves and set aside.

In a large bowl, combine the cauliflower rice, grated zucchini, chopped spinach, almond flour, and Parmesan cheese.
