Ingredients

  • 1 whole (approximately 4-5 pounds) Duck
  • 2 tablespoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Five-spice powder
  • 2 tablespoons Olive oil
  • 1 large head Cauliflower
  • 3 stalks Green onions
  • 2 tablespoons Soy sauce (or coconut aminos for a lower carb option)
  • 1 teaspoon Sesame oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Pat the duck dry with paper towels. Prick the skin all over with a sharp knife or skewer, being careful not to pierce the meat.

Step 3

Rub the duck inside and out with salt, black pepper, garlic powder, and five-spice powder.

Step 4

Place the duck on a rack in a roasting pan, breast side up. Brush with 1 tablespoon of olive oil.

Roast the duck for 1.5 to 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C). Turn the duck over halfway through cooking to ensure even crisping.

While the duck is roasting, prepare the cauliflower rice. Cut the cauliflower into florets and pulse in a food processor until it resembles rice grains.
