Ingredients

  • 2 pieces large red onions
  • 1 cup almond flour
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 2 large eggs
  • 0.25 cup unsweetened almond milk
  • 0 for frying avocado oil

Directions

Step 1

Slice the red onions into 1/4-inch thick rings and separate them carefully.

Step 2

In a shallow bowl, combine the almond flour, Parmesan cheese, salt, black pepper, paprika, and garlic powder.

Step 3

In another shallow bowl, beat the eggs with the almond milk until smooth.

Step 4

Heat about half an inch of avocado oil in a deep skillet over medium heat until it reaches 350°F (175°C).

Step 5

Dip each onion ring into the egg mixture, making sure it is fully coated. Then, dredge the ring in the almond flour mixture, pressing gently to adhere the coating.

Step 6

Place the coated rings onto a plate as you work.

Step 7

Carefully place the onion rings into the hot oil, frying in batches to avoid overcrowding the skillet.

Step 8

Fry the onion rings for about 2-3 minutes on each side, or until they are golden brown and crispy.

Step 9

Remove the rings with a slotted spoon and drain them on a paper towel-lined plate.

Step 10

Repeat until all onion rings are fried. Serve them hot and crispy, with your choice of dipping sauce if desired.
