Ingredients

  • 600 grams Cauliflower florets
  • 120 grams Almond flour
  • 100 grams Shredded mozzarella cheese
  • 30 grams Parmesan cheese, grated
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Chopped parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.

Step 2

Cook the cauliflower florets in a pot of boiling water for about 10 minutes or until tender. Drain well and let cool slightly.

Step 3

Transfer the cooked cauliflower to a food processor and pulse until it reaches a rice-like texture.

Step 4

In a large bowl, combine the cauliflower rice, almond flour, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.
