  • 2 large Eggs
  • 2 tablespoons Heavy cream
  • 8 large Lettuce leaves
  • 0.25 cup Avocado oil
  • 0.25 cup Low-carb mayonnaise
  • 2 tablespoons Dijon mustard
  • 4 slices Pickles

Directions

Step 1

Trim any silver skin from the pork tenderloin and slice it into 1/2-inch thick medallions.

Using a meat mallet, gently pound each medallion to about 1/4-inch thickness.
