Ingredients

  • 6 cups Romaine lettuce
  • 3 cups Spinach leaves
  • 1 cup Pecans
  • 0.5 cup Sunflower seeds
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.25 large Red onion
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Honey
  • 2 tablespoons Apple cider vinegar
  • 1 clove Minced garlic

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

On a baking sheet, spread out the pecans and sunflower seeds. Drizzle with 2 tablespoons of olive oil, sprinkle with salt and pepper, and toss to coat evenly.
