Ingredients

  • 4 pieces Large Portobello mushrooms
  • 1 cup Parmesan cheese, finely grated
  • 0.5 cup Almond flour
  • 2 large Eggs, beaten
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 as needed Olive oil spray
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with olive oil.

Step 2

Clean the Portobello mushrooms with a damp paper towel and remove the stems. Slice the mushrooms into thick strips, resembling fries.

Step 3

In a shallow dish, combine the finely grated Parmesan cheese, almond flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to combine.

Step 4

In another shallow dish, beat the eggs until well combined.

Step 5

Dip each mushroom strip into the beaten eggs, allowing any excess to drip off, then coat with the Parmesan-almond flour mixture, pressing gently to adhere.

Step 6

Place the coated mushroom strips on the prepared baking sheet, ensuring they are not touching each other.

Step 7

Lightly spray the tops of the mushroom fries with olive oil spray to help them crisp up in the oven.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the mushroom fries are golden brown and crispy, turning halfway through the cooking time.

Step 9

Remove from the oven and allow to cool slightly. Garnish with fresh parsley before serving.

Step 10

Serve immediately as a delicious low-carb snack or appetizer.
