Ingredients

  • 500 g Chicken breast, boneless and skinless
  • 120 g Almond flour
  • 60 g Parmesan cheese, grated
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper, ground
  • 2 large Eggs
  • 2 tbsp Olive oil
  • 500 ml Coconut oil or avocado oil for frying

Directions

Step 1

Cut the chicken breast into small bite-sized pieces, roughly 2 cm in size, and set aside.

Step 2

In a shallow bowl, mix together the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.

Step 3

In another bowl, beat the eggs thoroughly.

Step 4

Heat the coconut or avocado oil in a deep frying pan over medium-high heat to about 180°C (350°F), ensuring the oil is hot but not smoking.

Step 5

Dip each chicken piece into the beaten eggs, allowing any excess to drip off.

Step 6

Coat the chicken pieces in the almond flour mixture, pressing gently to make sure each piece is fully coated.

Step 7

Carefully place the coated chicken pieces into the hot oil, cooking in batches to avoid overcrowding the pan. Fry for about 3–4 minutes on each side or until golden brown and cooked through.

Step 8

Use a slotted spoon to remove the chicken popcorn from the oil, and drain on a plate lined with paper towels.

Step 9

Allow to cool slightly before serving with a keto-friendly dipping sauce of your choice.
