Ingredients

  • 4 medium zucchini
  • 2 tablespoons butter
  • 1 medium, chopped yellow onion
  • 3 cloves, minced garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup, chopped fresh basil
  • 0.5 cup, grated parmesan cheese

Directions

Step 1

Wash and roughly chop the zucchini into 1-inch pieces, leaving the skin on for extra nutrients and color.

Step 2

In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, then sauté until the onion becomes translucent, about 5 minutes.

Step 3

Add the chopped zucchini to the pot and cook for an additional 3-4 minutes, stirring occasionally.

Step 4

Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let the soup simmer until the zucchini are tender, about 10-12 minutes.

Step 5

Using an immersion blender, blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a traditional blender, then return it to the pot once blended.

Step 6

Stir in the heavy cream, salt, black pepper, and half of the chopped fresh basil. Continue to heat the soup over low heat until fully heated through, about 3-5 minutes.

Step 7

Taste and adjust seasoning if necessary.

Step 8

Serve the soup hot, garnished with the remaining fresh basil and a sprinkle of grated Parmesan cheese.
