Ingredients

  • 4 cups Zucchini noodles (zoodles)
  • 2 tablespoons Butter
  • 3 cloves Garlic, minced
  • 1 cup Heavy cream
  • 4 ounces Cream cheese
  • 1 cup Grated Parmesan cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Nutmeg
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Begin by preparing your zoodles. If using a spiralizer, create zucchini noodles and set aside. Alternatively, you can purchase pre-made zoodles from the supermarket.

Step 2

In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Step 3

Add the heavy cream and bring to a simmer. Reduce the heat to low and add the cream cheese, stirring until melted and the mixture is smooth.

Step 4

Stir in the grated Parmesan cheese, salt, black pepper, and nutmeg. Continue stirring until the sauce is thick and creamy, about 3-4 minutes.

Step 5

Increase the heat to medium and add the zoodles to the sauce. Toss gently to coat the zoodles thoroughly in the creamy sauce. Cook for 2-3 minutes, or until the zoodles are heated through but still slightly firm (al dente).

Step 6

Remove the skillet from the heat and transfer the creamy white sauce pasta to serving plates.

Step 7

Garnish with freshly chopped parsley and extra Parmesan cheese, if desired, before serving.
