  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 2 chopped celery stalks
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 medium, diced zucchini
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

In a large pot over medium heat, add the olive oil and butter. Once the butter has melted, add the diced onion and sauté for 3-4 minutes until translucent.

Step 2

Add the minced garlic and chopped celery to the pot and cook for another 2 minutes, stirring frequently to prevent burning.

Step 3

Add the broccoli florets, cauliflower florets, and diced zucchini. Stir well to combine with the other vegetables.

Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the vegetables are tender.
