Ingredients

  • 2 cups, diced Taro root
  • 2 tbsp Olive oil
  • 1.5 cups, sliced Button mushrooms
  • 3 minced Garlic cloves
  • 1 cup Heavy cream
  • 0.5 cup, grated Parmesan cheese
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp, chopped Fresh parsley

Directions

Step 1

Peel and dice the taro root into small cubes. Wash thoroughly to remove any starchy residue.

Step 2

In a large frying pan over medium heat, add the olive oil.

Add the diced taro root to the pan and sauté for 8-10 minutes until it starts to soften and brown slightly.

Add the sliced mushrooms to the pan and continue to sauté for another 5 minutes, or until the mushrooms are tender.
